Wife and I tried this for the first time tonight - it's great but filling. Not my recipe as I found it on the internet a couple years ago. Don't know how it would work out with artificial shrimp when they come out in the future. Enjoy, Rick B
Blue Cheese Shrimp
4 oz blue cheese, crumbled 8 oz cream cheese, cut in cubes & at room temperature 1 tbsp chopped fresh chives 1 tbsp chopped fresh parsley 1 clove garlic, minced 1/3 cup white wine* 2 pounds shelled raw shrimp cooked rice or pasta
In a medium mixing bowl combine the blue cheese, cream cheese, chives, parsley, garlic, and wine. Beat until smooth. Fold in shrimp by hand. Pour into a greased shallow 2-quart casserole dish. Place in oven and bake at 400ºF for 20 minutes or until mixture is bubbly and shrimp are just done. Mixture will be soupy. Serve over hot rice or pasta. Makes 6 servings.
* You may substitute 1/4 cup gingerale + 1 tablespoon lemon juice for the wine.

Rick, that sounds really fine! Mrrockpicker loves him some shrimp. Living in San Diego and scuba diving growing up, he was raised on hand caught seafood - fish, scallops, abalone and lobster. Those were the days... Not positive, but I think you can no longer legally take abalone anymore, totally protected.
I think to get an abalone sandwich these days you have to go down to Mexico, either Puerto Nuevo, Ensenada or even further south. We don't go down there anymore, it's not safe. Besides, I don't have a passport to get back into the US!

My dad and uncle used to get abalone, too. Back in the day, of course. I'm sad that I never had a chance to try it. Dad had a lot of stories. He used to get them while he was stationed at Pt Magu in the 60's. He spent a lot of time at San Nicolas Island. I have pictures of him on the island back then. He loved abalone.
My nephew gets me wild caught shrimp from NC. I have an order out for 5 lbs. I would SOOOOO try this if I could eat it.

If you like goat cheese, mix it in with the cream cheese and you will be fine. We are fixing it with blue cheese tonight for my wife's sister and husband. Wife liked it so much that I get to eat some two times this week - lucky me.

I got the Carolina shrimp from my nephew. I made some homemade alfredo to go with it for my grandson who is a shrimpaholic. I'm gonna try this recipe, too- if it lasts long enough.
