I have a favorite for turkey, chicken, quail, dove and duck, that includes peanut butter, soy, garlic, ketchup, squeezed orange/lemon, ginger and pepper......it marinades well after mixed together slightly warm........I don't ever use wines, vinegars, beers for jerky, like some do when using peanut and or ketchup.......like everything, it's personal taste. I stick to traditional tried and true sauces......rubs are different story. Would you be willing to post this and your recipe for the beef jerky in the Recipe Thread??

Sure...... But I'd rather wait until after/if I get any feedback from those who have tried (made) that 1st receipt ..........preferably air fried. Since I'm still in the airfry experiment stages, I'd like to hear what others have to say about their experiences as well. Expand the learning curve and refine the methods so anyone inclined to airfry jerky enjoy my receipt's.......not just add to their "cook" books......lol....I have put together (on paper), over the years, 5 to 6 sauces & rubs for each type of meat jerky I have made.......those that others have found enjoyable and request often.....family, friends and folks that I have worked with.....that air fryer will now get it's use much more often....Been having an itch to jerk during the holidays when everyone is dropping subtle hints on me......lol....the dehydrator is a PITA to clean and reload, and takes a whole lot more time to process....!
My Dad taught me how to make jerky, when I was a kid. He had friends who hunted all kinds of game and would share with him specifically to have him smoke and or jerk all kinds of meats. We had two old, gutted refrigerators and a small walk-in metal shed that were converted into smokers, insulated, fitted with stove pipes and fire boxes. Since we had citrus, apple, and hickory/walnut groves on our property, wood was a plenty. I can remember spending summers chopping, splitting & chipping pounds of that stuff for smoking/curing.........and staying up late on weekend nights prepping meats with sauces & rubs for the next days smoking sessions.......man, I can almost smell that smoke & sauces on me now, as I type........lol.....I miss that, but technology is so much more do-able today, old age and all....lol
