family I grew up with in Phoenix would leave in the summer months about 6 weeks, schools out and camp out at Wood Canyon Lake to escape the heat I almost went one summer with them but something happened.... mohs

Well Jean I’m not proud of that phase of my existence when I was 8 years old I went to juvy For throwing a stone at a car Strangest thing The passenger window was open & the rock hit the person in the head Yep he turned out to be off duty police office thankfully no permanent damage guardian angels were looking out for me and him BUT I was in big trouble! Ruined my summer....

When I think "camping" I automatically think of tent camping, and where you might have to haul the stuff without refrigeration. If you have a way to keep things cool, this can be prepared ahead of time, and everyone will praise you for it (my favorite picnic food)...
3 c. chicken, cooked and diced ½ c. celery, diced 2 green onions, sliced 3 c. cooked rice ½ c. mayonnaise ½ c. yogurt 1 tbs. lemon juice 1 tsp. honey 1 tsp. salt ½ c. whole cashews (I usually go more than that)
1. Mix chicken, celery, onion and rice; 2. In a small bowl, mix mayonnaise, yogurt, lemon juice, honey and salt; 3. Lightly toss dressing and chicken/rice mix; 4. Cover tightly and let sit in refrigerator for at least 2 hours to blend flavors; 5. At the last minute before serving, stir in cashews.
This can be served by itself, as a salad on a bed of lettuce or other greens (my favorite), or as a sandwich filling.
This actually tastes better after sitting refrigerated for 24 hours or so. The nuts get soggy and unappetizing if put in before it is ready to eat.

Ruined my summer.... Dang, Ed. You sound like you have my brother's luck. He broke a window, got caught and mowed lawns for a summer to pay for it. What an impression that experience had to leave on an 8 year old. I hope they weren't too hard on you.

This reminds me of waldorf salad with chicken - kinda.

Ruined my summer.... Yeah, dang, Ed! Something about young boys and throwing things, lol. Glad no one was hurt, and that you didn't get thrown in the pokey. But, yeah, I bet that did pretty well ruin your summer. No camping trip anyway...
My DH, as a pre-teen, was cutting across a vacant lot with a friend of his. At that age in their young lives, they were into slingshots and wrist rockets. They weren't shooting pachinko balls, or ball bearings for ammo. No, they were shooting split peas, which they had because they raised pigeons. Well, there was this Po-lice helicopter flying over this field they were cutting across, so, being boys, they loaded their "pea-shooters" - in the truest sense of the term - and aimed at the helicopter flying overhead. Not like they were going to hit it, but definitely not the smartest thing for them to do. A cop car rushed in, they were ticketed and were hauled off. Their parents had to come and get them.
They had a court hearing a week or so later. When the judge heard what they had done, what they were using to shoot at the copter, and what they were actually shooting - split peas - he dismissed the case, and chewed out the "arresting officer" for wasting his time, lol.
That was most likely his first brush with the law, there were others. Boys will be boys.

I'll go with powdered eggs. Been around forever and offer up creamy, delicious scrambled hot goodness. Got cheese? Toss in on, bacon, ditto. All sorts of ways to dress up this honest to gosh nutritional punch. I've got some powdered eggs put away, but I have never had them. I've heard good and bad. If I throw in some delicious bacon and cheese what could go wrong? Nothing can go wrong. PE's are lightweight with a long shelf life. What you'll get with bac and cheese on PE's is pure magic. I can taste them now.

When my husband was a little boy, about 7, he and his brothers decided to go gaff salmon in the nearby creek. Since they weren’t having any luck in that stresm, they hiked out to the highway (a two lane road) and headed for another stream.
At about that time, a game warden stopped his car, and got out and took away their gaff hooks. The boys started to cry. Warden told them to get in his car. He took them to the little mom and pop store down the road, bought them all an ice cream, then took them home.
They were severely scolded by dad for not having their gaff hooks. And he made them each another one. Told them to stay off the highway😄
Hard to feed a family of six during the depression.

Yup, I'm a beef stew and french bread guy. Also hot dogs. Stuff I don't cook, I love summer sausage or salami and Ritz crackers,lunchables or all sorts, beef jerky and trail mix. Oh and usually donuts and milk for breakfast. Yum!...Mel

Yup, I dragged it all out, took account. I need to refresh some things. Some rats got into my stuff, but 99.9% of everything is ok. Had to tape up some holes in a couple of bags. I blew up the bed to check it and the pump and I'll be putting up the tent and checking it on Fri. I need to shop the menu and that's about it. Then we have to figure out how to get it all in the car. We have 2 tables, 2 chairs, 2 coolers, 8 man tent, a queen mattress, a large kitchen tote, battery fan, power pack, games, suitcase, etc, etc. We don't travel light. But, we've done it before, so I know we can do it again. We were gonna rent a bigger car, but that's a waste since it will be parked for a week. Counting down the hours! Use a shoe horn? Just kidding. Good that you checked the air mattress. Nothing worse than finding out the one you are going to use has a slow leak. When we went up to Joshua Tree to do some prospecting (Hall of Fame claim) a couple years ago, we tent camped, as no way to get our trailer up in there. I used the padded mattress from Lucy's chaise lounge (Lucy was my last dog), Bob had a brand new air mattress - that leaked! He woke up in his sleeping bag, laying on the ground. I woke up on a deceased dog's mattress, but I wasn't on the ground! I hate tent camping. We keep our flashlights in the house, but if you had yours in storage, make sure you check the batteries. True story - we used to have to bring a 12 volt fan and a jumper battery - for the dogs!

Depends on the type of camping and how long the outing we'll be doing.....Roughing it in the back hills or valley areas of north/west Utah with my boy, two 40lb backpacks....rice, beans, spam, slab of salted pork rind (we call beacon), fruit/protein bars, bag of mixed spices, home made jerky, assortment of dehydrated fruits, coffee/tea/bourbon and powdered eggs/mashed potatoes......sleep on the ground with mats, bags and tent.
If we are urban camping, we'll make pasta/chili sauce and freeze it before trip (kept on ice). Whole potatoes, watermelon/cantaloupe, polish links/salami/pepperoni,dry noodles and much of the same we carry in our packs.......after all, it's what we call "camping"......if the lady's of the house come along, there are most certainly different accommodations and a much better selection of eats......lol

Chili-Mac. Box of Kraft Mac&Cheese + can of vegetarian chili. Nutritionally indefensible (bring along a vitamin), but quick and hits the spot in the evening after hiking or digging. Got back a few days ago. We did make this and DH did love it! Ordinarily, I would pass on so much prepared food, but it was a camping treat. Really easy to fix up and really hit the spot. Thanks for the suggestion.

This was the dinner menu. (In order of what had to be cooled first.) Most we had not taken before. Quick and easy.
First night, the half sub leftover from the road 2nd- grilled NY strip stuffed with slivers of garlic, "baked potato", sauteed sweet onions (we had a brief shower right before dinner. Thank goodness for trioxane!) 3rd- noodle alfredo with canned chicken 4th- breakfast dinner black label bacon and eggs Bacon never tasted so good! 5th- tortellini with sauce (dried tortellini just needed to be boiled) 6th- rice (which came out super awesome on the campstove!) with canned chicken a la king (this was nostalgic for DH who had it often as a kid. It was new to me.) 7th- deluxe mac and cheese with hormel no bean chili 8th- grilled beef brats, canned 3 bean salad
We also had tuna, ramen noodles and leftovers for breakfasts and/or lunches.
The ice ran out pretty quick. Going to the store for more was not an option. We were pretty isolated. Our campground was in the George Washington/Jefferson National Forest near the borders of VA, NC, TN. Super sweet spot. It was our 3rd time there. I reserved the best spot. Virtually no neighbors and right on a cool mountain stream. The stream is stocked with trout, but I didn't bring any fishing gear. Luckily, we missed the bears from a few nights before we got there.
We met a through hiker on the Appalachian Trail. He stayed a night there. We gave him some food for dinner that he wouldn't have to carry. It was like Christmas to him. He had been hiking for 500 miles. DH and my bro also hiked the trail in the 90's.

Supposed to be about 90 this afternoon. Today methinks it's going to be cheese filled bacon wrapped meatloaf smoked on the grill and eaten on the patio. I hope some of the first zucchinis are big enough to add to the meal.
