So what do the ends of the bits attach like, can I get away with putting some smaller ones on a wet angle grinder? I've debated getting a core driller to make sphere rough for up to 10 inch, but I'm wondering if after it's made if I can somehow put it on something sideways that I can manually move around the sphere to make it fully round.

No, handheld core bits for making cores will not work.

As for manual spheremaking handheld bits for larger spheres will work. The Rock would need to be heavy enough not to move while you work the surface. You will need to stop and move the stone to reveal new areas to work. Do this often .
