Thank you Patty! I will let my wife know. I only have a small hand in this venture. She is the one responsible for all this aesthetics and actually making the bread happen. Ahhhh- the old taste tester ! An important job in fact - I have one in this house as well

Well, that of course applies. But mainly I make the wild yeast culture. It’s a team effort!

Gotta shoot for the crackle! When you pull the bread from the oven, you should hear it crackle. If it crackles, its a perfect loaf. If you bake a big loaf, say 2-3 pounds, it may take up to 3 days for the flavor to really start coming out.

A year ago I replaced my 35 year old 24 inch oven with a 30 inch convection and have considered doing some baking. I live in the Bay Area so I have the right climate. Over 50 years ago I was stationed in North Carolina. When I went home, I would fill my duffle bag with Florida grapefruits and on the return trip, sourdough loaves which were appreciated by coworkers.

Made sourdough pancakes this morning and they turned out fantastic. Haven’t gotten that full sour tang going yet, but definitely better than regular pancakes. I’m just pulling recipes off the Internet, trying them out and giving a bit of my own spin.

Here's a book I have from years ago, when we enjoyed eating regular bread
Highly recommend. The newer version has bread machine info.

So far so good! Even though it’s not super sour yet, the texture of the bread is fantastic. As for sour dough pancakes…wow! It’s been 2 days since I made some and the leftover ones smell amazing when I open the container, like they are getting better with a couple days aging. They taste really good also.

Still having a blast with this. I have the San Francisco sourdough starter still going strong, as well as a local one that’s quite tangy and interesting. Pancakes are one of our favorite things. My wife’s making lots of herb sourdough. She has a batch of regular going now. I even got my brother into it and he’s having a blast. It’s storming outside, cold, and the smell of baking sourdough is waifing through the house. Gotta love it!
