Although I do wish they only used about 1/2 the vinegar they do in making it. Me too. See how easy it was to improve on an age old product? No doubt vinegar is cheaper than aged chile peppers. It may also be for food safety as the low pH is needed for room temp foods specially one that has never been cooked.

Every time a MAN posts that he has cooked something, I tell my husband. Hint. Hint! Every time, he says that's wonderful, but he wouldn't want to overstep into my bailiwick! He makes good coffee, though.
