Only the 2nd or 3rd time I've ever worked it, but it seems to turn out that way every time- undercutting, maybe?

Not just you...every Dino Bone I've ever worked does the same thing. I'm going to experiment with some Art Resin at some point...and also doing one with a quartz cap doublet...one of these days!
