Cina, did I read in another post that there are five offspring involved? Where will they sit when you are underway? I am thinking you could mount seatbelts to the floor behind those bench seats that Chinook is talking about and strap them in there .
An idea for those center panels between the benches is to make them of plain 3/4" plywood with attachments so that they can either be hung between the seats for sleeping or from the walls forward of the benches for tables. Plain upholstered cushions from an old sofa would work fine for the center space at night. They could be arranged as the back cushions for one of the benches, secured with a bungie each, during the day. Make the benches high enough that you can stow five gallon buckets under the seat. These are great organizers for everything under the sun, and with lids on they make good auxilary seating inside or out.
Get a Porta-potti. Use a portable 2-burner camp stove. Propane in the small bottles is good for camping trips. Sleep in sleeping bags; they are easier to stow than bedding. Get a six gallon cubic plastic water jug with spigot. This can reside under a bench. During the day it comes out and sits on one of the benches. Use ice and coolers with drains or a 12v cooler instead of a refrigerator. Install a separate 12 volt system for the house. Two deep cycle batteries or a small generator to feed it. There are lots of 12v appliances. Put a big 12v overhead fluorescent light in the middle of the back area. you wont be sorry.
Get a folding camp table that you can stow inside or carry on top. Make a rail along one side outdoors above the windows that you can attach one edge of an 8x10 tarp to for outdoor shade and weather protection. You can cook and eat under it in any summer weather short of a storm. That's my 2c.
