Ok here goes.
Spaghetti Jambalaya
1 pack Sausage (Your Choice) 1 small pack boneless chicken breast or chicken tenders Seasoning Mix (frozen or in the produce section: contains onions & peppers) 3 cans chicken broth (I usually use Swanson because the can has a pop top) 2 chicken bouillon cubes Spaghetti or pasta noodles (I’ve never used rice but I’m sure it works the same way) Kitchen Bouquet (found near the spices or gravy mixes)
Cut sausage and chicken into bite size pieces. Cook sausage first in a 3 or 5 quart pot until done. Do not rinse out the pot. Take the sausage out and then cook the chicken until almost done. I like to add a little seasoning to my chicken because it gives it more flavor (Tony’s, salt, pepper, etc…). Once the chicken is cooked, take the chicken out then cook your seasoning mix until the vegetables start to become clear. At this point add the chicken and sausage back into the pot.
If at any time the bottom of the pot looks too dry you can spray Pam cooking spray to keep it from drying out too much. Let the meat and seasoning mixture cook for a couple of minutes (stir occasionally to keep from sticking). Add chicken broth, chicken bouillon cubes, and noodles.
Add kitchen bouquet for a darker color (not a necessary ingredient). As the jambalaya cooks, the noodles will start to absorb the chicken broth. When the noodles are done, remove pot from heat and let cool. As the jambalaya cools, more of the liquid will absorb. If it’s too soupy you can drain any excess liquid. I don’t drain because the liquid contains a lot of flavor.
