Soft shell crab po'boy for me. Maybe some crawfish etouffė. I need to set my calendar. July is crawfish season here. Etouffé it is! Figured Scott has cajun blood. Does okra agree w/your palette ?

Okay-Cajun born and raised in Lafourche Parish. I DO NOT add okra or tomatoes to my chicken sausage gumbo. However I make a great Shrimp Okra gumbo that includes tomatoes. There are many variations of gumbo depending on what part of south Louisiana you're in.
All that being said-> I would definitely eat James' gumbo.
P.S. I make my roux from scratch.

Cutting okra and adding it to a pan with hot olive oil and some Braggs liquid Aminos with a dash of garlic powder equals yum

Today I am going to the Gumbo Festival in Chackbay-Choupic, Louisiana. Their specialty is Chicken Sausage Gumbo, served with a side of potato salad. This area HAS to have a side of potato salad(or sometime in with their gumbo--not my taste.) I will report back my findings. This Californian doesn't eat anything that would make her sick. Fast. Or anything crawling or looking at her such as trout. Rude to eat a critter looking at you.

Okree, fried okree, boiled okree, raw okree, okree okree, okree boiled with peas, peas boiled with okree, just fine with me...the sign of a sho'nuf *good* suthern meal!!! Beat the stalks and make a good crop and pick'em young.
