Here's my recipe for Oysters Rockefeller. I am able to gather my own oysters along the SC Coast in the fall and spring of the year. Oysters Rockefeller (Rick B) 2 dozen oysters - fresh or frozen in shell 4 strips crisp crumbled bacon Onion chives or finely minced sweet onion 1 small box frozen spinach (thaw, drain and squeeze out liquid) White cheddar cheese or cheese of choice Lemon juice Butter Salt Garlic powder Panko bread crumbs Texas Pete hot sauce Place a dozen oysters at a time on a microwavable plate and cook for 1 1/2 to 2 min. (2 min. works for me on frozen oysters in the shell). Open the oysters, discard the empty half and pour the liquid out of the oyster shell. After two dozen are finished, place them in a shallow baking pan lined in aluminum foil. Add a liberal amount of spinach to each oyster then top with salt and garlic powder, crumbled bacon, a small dab of butter, a few drops of lemon juice, a drop or two of hot sauce, onion, cheese and finally bread crumbs. Place in preheated oven at 375 degrees. When cheese melts and edges of oysters begin to bubble, they are done. Note: Oysters can be frozen in the shell for up to six months so they can be used well after the season has ended. They are also easier to open when microwaved. Edit: Photo added 2022-12-29

Here's a cole slaw recipe that we use in the South. I like to put it on a BBQ sandwich - I do make homemade oak smoked chicken BBQ. Southern Sweet Cole Slaw 3/4 Cup Sugar 3/4 Cup Apple Cider Vinegar 3/4 Cup Water 1 Tablespoon Vegetable Oil 1/2 Teaspoon Celery Seed 1 Tablespoon Kosher/Sea Salt 1/4 Teaspoon Black Pepper 1/2 Onion - Grated thin 1 (10 oz.) Bag Angel Hair Cabbage (grated thin) Juice from 1/4 lemon 1. Combine water, vinegar, sugar, salt, pepper, celery seed and lemon juice. Bring to a light boil, stir and disolve salt and sugar. Turn down heat and lightly simmer. 2. Add the vegetable oil and onion - Stir for about a minute. 3. Turn off the heat and take the pan off the burner. Stir in the cabbage and let it sit until it wilts. Place the cole slaw into a container with all the liquid and refrigerate for at least 4 hours or overnight before using. Great Southern style sweet and tangy non-mayo coleslaw. Being raised by a Yankee Mainer, I always make horseradish colesaw. Coleslaw is such a great summer dish!

Black Raspberry Brandy Blast
A great adult beverage for a hot day. This can also be made without the Brandy.
Serving size 3/4 Pint. Recipe makes 2-3 servings.
Ingredients ¾ C Black Raspberries (fresh or frozen) 2 C Old Fashioned Vanilla ice cream ½ C cream 1 TBS lemon juice ½ tsp nutmeg ½ C good brandy
Combine all ingredients except ¼ C of berries in blender until smooth. Pour mixture into pint glasses and top with remaining berries. Serve with spoon straw.
Yummy.

Turn fresh fruit into a cheesecake treat. This works well with strawberries, cherries, peaches, apples, wild plums and nectarines. Can be used with other berries if they are put on a toothpick. Make the graham cracker crumb recipe below for a double dipped bite of goodness. A triple dip option is at end.
Ingredients
1 pkg light cream cheese 1 pkg whipped topping 1-2 TBS honey or maple syrup 1-2 TBS lemon juice.
Combine room temperature cream cheese with refrigerated whipped topping. Beat well. Add the honey or maple syrup and lemon juice. Beat well. Adjust proportions to taste. This can be stored in refrigerator for a week or frozen for future use.
Graham Cracker Crumbs.
Crush one inner package of graham crackers (about 8 graham crackers). Add 1 TBS dark brown sugar or cane sugar. Add your choice of spices. Nutmeg, cinnamon, allspice or cloves work well. Specific amount depends on personal taste. Would start with 1/4 tsp and adjust as needed. Mix well. Serve in dish next to the dip.
If you want a triple dip, melt some chocolate in a pot and have that available. Or, dip the fruit in it ahead of time and let dry. Any type of chocolate, except milk chocolate may be used.

Fernwood, if I drink the Black Raspberry Brandy Blast I'd definitely eat that cheesecake desert right behind that. The calories will add up fast.

All of these recipes sound great, but when I am out rockhounding, simple is the best. Steak on a BBQ with a pot of baked beans!!!

Fernwood, if I drink the Black Raspberry Brandy Blast I'd definitely eat that cheesecake desert right behind that. The calories will add up fast. They kind of go together. I have a mix of high and low calorie recipes, as I am trying to do a high calorie diet while eating somewhat healthy. My metabolism is so high, I burn calories in my sleep, lol. My usual is about 3000 calories a day. Have a tough time keeping my weight up where it should be.

Cowboy Caviar
1 diced red pepper 1 diced yellow pepper 1 diced orange pepper 1 sm can diced green chillies 11 diced pickled jalepeno peppers 1 diced med purple onion 3 or so diced sticks of celery 1/2 a bunch of diced up fresh cilantro ( you can add more or less to taste) 1 can of hominy(drained) 1 can black eyed peas (drained) 1 can black beans (rinsed and drained)
1 bottle of Italian dressing
Put all the diced veggies together and pour the dressing over it...marinate up to 24 hrs (chill) and serve. Perfect as a side dish or with crackers.

DUMP CAKE This is currently my favorite dessert (besides ice cream) because it is quick, inexpensive, pretty, and delicious!
INGREDIENTS 2 cans of canned cherry pie filling. There are two types of canned cherries --- the pie filling and the other is just cherries in a liquid.. I've used both and both are fine. 1 can of crushed canned pineapple, or cut up pineapple rings
1 box of dry cake mix. I've used both yellow cake mix and white cake mix. Both are good.
1 cube of butter.
DIRECTIONS -dump one can at a time of either the cherry filling or the pineapple into a greased (Pam spray or butter) 9 x 13" pan. Stir if you wish.
-dump the cake mix on top of that; break up lumps. Do not stir. Ignore the recipe on the box, just dump the powdered mix.
-either melt the butter and pour evenly all over the cake, or thinly slice the butter and place all over the cake.
Bake in 350 degree oven for one hour.
I buy all the ingredients at the Dollar Tree. Total $4 plus the cube of butter. Cool. Enjoy!

Pat, my wife has a variation of this recipe - it's good. She uses sliced peaches instead of the pineapple and cherries. When we go camping this is one of the deserts she fixes. Rick B

I tried to find my mom's recipe for this, but couldn't. We typically make it without a recipe. It's like chili or spaghetti- very adjustable for taste. It calls for a lot of cheese, but it also makes a lot. I can this to take camping and add the cheese at the table. We never baked it. It is a one pot dish. We used ground sausage and omitted the flour, bacon and broccoli as unnecessary. I added much more good quality chili powder. I searched the whole internet and came up with ONE recipe for this! It's really not quite the same, but infinitely adjustable. Pretty sure we added more tomatoes. Cans well (without the cheese) and freezes well. Very hardy. I still have some put up for camping.

Servings: 10 Ingredients
2 lb White hominy, liquid removed well (up to 2-1/2) 1/4 c. Margarine 2 Tbsp. Bacon drippings 1/2 lb Bacon, crisp, crumbled 2 Tbsp. Flour 2 tsp Chili pwdr 1 tsp Salt 1/4 tsp Oregano 1 can (4 ounce) minced greed chilies 1 can (10 ounce) tomatoes 2 c. Water 1 1/2 c. Grated Cheddar cheese 1 x Onion minced broccoli 1/2 c. Grated Cheddar cheese 1 sm Jar pimentos
Directions
In large skillet, toast hominy in margarine till light browned. In another skillet or possibly microwave cook bacon until crispy, hold out 2 Tbsp. drippins. (we brown our onions in the drippins, but you don't have to do it which way-that ever way you prefer) In bowl, mix together bacon drippins, flour, chili pwdr, salt, oregano, chilies, tomatoes, and water. Alternately layer half the hominy, 3/4 c. cheese, half the onion and tomato mix in a lightly greased baking dish. Repeat process of layering. Sprinkle the 1/2 c. grated cheese over the top. Bake at 350 for 25 min. This will freeze very well.

All of these awesome sounding recipes with onions and peppers are making me sad, as I am allergic to both. I m thinking of trying some of these with the juices and see what happens.

fernwood if you are trying to gain or at least hang on to the weight, eat donuts! My husband has a hard time maintaining his weight, but donuts always bring it up. Without donuts, he would lose weight. I buy the donuts, and make cookies for him every week. Good luck!
