Fired up the smoker about 07:00 this morning before I even had a cup of coffee! USDA Prime Brisket at Sam's along with Pork butt. Only doing one butt and the brisket today though. Gonna give the pulled pork to a friend for all the help with displays and stuff at the new shop. Maybe even a thin slice of Brisky if he behaves It was looking good at about the 2 hour mark My homemade rub on the pork and only salt and pepper on the Brisky

After letting it rest for about an hour, I sliced into that bad boy and it is 9 kinds of awesome!!! First time I ever smoked a Prime cut and I am not disappointed as it was well worth the extra 50 cents per pound! It is fork tender and just melts in your mouth! I wish y'all could have a bite

I'll be right over........Damn that looks great! BYOB Thanks. The colors are funky as i didn't fuss with the settings or white balance. Nice smoke ring with a good, but not tough, or dry "bark". All I put on my Briskets for a rub is course black pepper and Kosher salt. The flavor the meat develops stands on it's own without a bunch of spices covering it up. Sauce is always served on the side if anyone wants it, but most folks take one bite and say "forget the sauce!"

I am flying over. How far are you from the airport. About 15 minutes from Branson West AP. (KFWB) It is large enough to handle commuter AC, but not commercial jobs.

Man, wish I had a private jet. I've only been up in one. A Cessna Citation back around 1980 or so. I had no idea those things were that nimble! This guy was a former jet fighter pilot and we had a very interesting ride! I still can't believe I didn't get airsick A few months later he was flying his inlaws somewhere and had a heart attack at the controls, nosed her over and made a huge smoking crater

I lived in the central valley of California at the time and was up in the Sierras Gold prospecting. I heard this roar overhead and looked up to see a P51 go into a vertical climb, do a hammerhead, roll out and go into loops. He practiced maneuvers for close to an hour directly overhead and I just set there in awe watching and enjoying the sound of that merlin engine!

I believe it was the fastest low altitude prop fighter and the P-51 fastest prop at high altitude. Retired as squadron Commander of F8 Crusader jets. The Corsair had many design flaws, but once in the air was a superb dog fighter and stunt machine. He found the Corsair to be more exciting to fly than the much faster jets.
