My mother and my grandmother used to kick my butt when I called their 'preservatives' by the name 'jelly'. So I asked Jean if it was jalapeno- jam, jelly or preservative. The recipe was posted here by Mike Fossilman, he called it jalapeño jelly. Correction - On the recipe, it is actually called "Pepper Jelly."

LOL,my jelly (Tammy really makes it).....It has been sent all over the states....I'm glad everyone likes it... James,Tammy makes Habanero jelly too..... I make the Habanero BBQ sauce and Dragons Breath.....

Here is Tammy making the last batch of Habanero jelly...Yes the fumes will kick a persons ass while making it-but it tastes soooooooooo good!!!! Thumbs up

that habanero BBQ sauce is the chit...i have used it twice this year at the lake....we have a pretty close knit community during the summer....everyone just kinda eats off everyones grill and tables. they love it...they always come back for more....kinda breathing hard to cool there lips....so hot but so good. i could tone it down a bit....but naw....its good just as it is. ...kev

The Fleamarket we are in now, had a 4th picnic for the vendors. Everyone was to bring something. Well, I brought my signature Cherry Cheesecake with Jalepeno pepper sauce. Folks there laugh, and my moniker as Mr. Methane raises eyebrows. They all laughed at the cheesecake, untill I brought it in and it was set on the table. It disappeared! I bet there will be some folks who thought they sat on red hot rebar tomorrow. Takes some getting used to, but it sure is good. The bakery here makes it now. They got the idea from Mr. Methane!

James, the way I understand it, jelly is made using only juice, no chunks of fruit. Jams and marmalades do have pulp or bits of fruit in them. Preserves is actually an all-encompassing term. It can mean anything that has had something done to preserve it. Could even mean jerky. Of course, most people think of only jams and marmalades as preserves. There is a rather tasteless joke on the internet about the difference between jams and jellies, but I will not repeat it here, lol. This is a family show.

That's why people that make home made jam despise it being called 'jelly'. It is a lecture I have had many times. It really aggravates people that make jam. They seem sensitive about their jam. My Grandmother would take your head off if she heard you calling her jam 'jelly'. So me and my little brother dared each other to call it 'jelly'. Around Grandmother or Mom. They would go off on us and we couldn't stop laughing. Till Mom pinched a blood blister on one of us.

Boiling the juice of the pepper plant chases me out of the house,the fumes are overpowering! I would rather grind my homemade horseradish than boil hot peppers for juicing!!!!

fossilman, here is the skinny. Make some cheesecake. Good and thick and heavy. Then get cherry topping. Fresh, good jelly texture with cherries. Once cold, get some www.tabasco.com/tabasco-products/sauces/tabasco-green-jalapeno-sauce/and make the top green! Just do not wipe your eyes. They burn. Do not snort any either. Save that for the tequila.
