Boneless beef ribs, that's what!!!! A 7 pound chunk went on at 7:30 this morning and was pulled at 6:30. It is fall apart tender and ohhh so juicy! I also did 2 slabs or pork spareribs as a token of appreciation for the mechanic who saved me $200 on a truck repair. I also just found out that they buried a very close friend of his this afternoon, so he was very moved and appreciative.

Yum !! Looks like it took a nice smoke too . what flavor you use ? i used the very last of my wood for this smoke, so it was a mixture of White oak, Hickory and Apple. I started with the oak, then the Hickory as meat absorbs more smoke early in the cook and beef can handle the stronger stuff quite well. I have a full rick of seasoned white oak and Hickory being delivered this weekend, so that will last me a loooong time Tonight, I will use the drippings to make a gravy, whip up some mashed potatoes and have a feast all over again

as promised, i made the gravy and a pan of mashed potatoes. Warmed up a slice of the ribs, cut it in chunks and ladled a generous helping of gravy over it and the taters. I'm stuffed! It was even better than dinner last night!

I'll change the avatar soon to the one I did for his Wife. It was more freeform and had a bunch of Purple in it. I had a lot of trouble making it for all the drool that kept getting on the stone!
