I generally run mine about about at the half-way mark. When you're doing something more delicate like cutting a bevel on the bottom edge, I would run it slower so the lap doesn't catch a chip and pull it out.
The reason I run mine at about 1/2 speed is because the faster it's spinning, the faster it's flinging water off the lap and not washing the swarf off the lap and keeping the stone cool. Also (and I'm sure this will happen to you at some point) if and when you loose some concentration while you're cabbing and you catch that stone funny on the lap, it will grab it, rip it out of your hand and shoot it G-d knows where. I don't have a Slant Cabber, so not sure if that's as much of a problem, but I bet it still happens.
Jason's right - polishing you want to go slower because of heat. The one caveat is polishing jade. That stone likes it real hot.

I'm thinking I will try a combo of speeds and see how things turn out - I did notice there weren't as many scratches on the edges of the two preforms I cut - I went slower and less pressure on them when rounding them out. And YES! I've had a rock ripped from my fingers and flung across the garage - thank goodness I found it and it wasn't too dinged up - it was actually the little conglomerate rock I found when in CA that I tried rounding - I like the dop sticks for that very reason - fat fingers and small rocks (and a fear of scraping up my fingers on the wheel lol) make for good reason to use them.
