This looks like such a useful & functional workspace, great job!
I'd love to see it after you're fully moved in and working as well since its fascinating to me to see how a design evolves once it's being utilized. Also, I'm envious as heck of your sink! Beats the heck out of the garden hose.
For inexpensive shelving, metal support rails & brackets combined with 1x6 lumber works decently for smaller amounts of weight, assuming lumber prices aren't insane out your way. If you want to get fancy the Home Depot sells a 4 shelf system made by Husky that holds 3,000 pounds per shelf for about $200.
For slabs, I've seen people use old CD* racks for open storage and old card catalogue* units for laying slabs flat. *I feel old just mentioning those.
