ANGELIC CLOUD COOKIE MINTS
CHOCOLATE COOKIE WAFERS:
1/3 BOX FUDGE CAKE MIX 1 TBSP. MELTED SHORTENING OR BUTTER 1/4 C. FLOUR-SIFTED 1 EGG 1 TBSP. WATER NON-STICK COOKING SPRAY
COATING:
1-12 OUNCE BAG WHITE CHOCOLATE CHIPS ΒΌ TSP. PEPPERMINT EXTRACT 2 TBSP SHORTENING
COMBINE COOKIE WAFER INGREDIENTS TO FORM DOUGH AND CHILL FOR 2 HOURS IN REFRIGERATOR
PREHEAT OVEN TO 350 DEGREES F.
ON FLOURED BOARD, ROLL OUT DOUGH TO 1/16 IN THICK. USING A LID FROM A SPICE CONTAINER, CUT OUT AS MANY COOKIES AS YOU CAN. SPRAY COOKIE SHEET, AND ARRANGE COOKIESD AND BAKE FOR TEN MINUTES.
ADD WHITE CHOCOLATE CHIPS WITH PEPPERMINT AND SHORTENING IN A MICROWAVE-SAFE BOWL. HEAT ON 50 PERCENT FOR 2 MINUTES. STIR GENTLY, AND HEAT FOR ANOTHER MINUTE. STIR AGAIN. CONTINUE UNTIL CHOCOLATE IS WELL MIXED WITH OTHER INGREDIENTS AND OF A SMOOTH CONSISTENCY.
USE A FORK TO DIP EACH COOKIE IN THE CHOCOLATE. TAP THE FORK ON THE EDGE OF THE BOWL TO REMOVE EXCESS CHOCOLATE MIX. PLACE COOKIES SIDE BY SIDE ON COOKIE SHEET WITH WAX PAPER AND REFRIGERATE UNTIL FIRM.

Oh well, might as well get off my diet now. ;D Never thought I last till Christmas anyway. I'm just happy I have all the ingredients in the house.
