I started off using plastic pellets, and they seemed to work fine. They are kind of a pain. I just started with the ceramic pieces. Just wondering if one is better than the other, or in what case would you use one over the other.

Short answer: Use plastic in a rotary after the coarse grind; use ceramic in a vibe.
In a pinch, you can use ceramic in a rotary if you don't have the right mix of sizes, but it's much more expensive than small pieces of rock.
