done deal! belly full! Here is more images. The pink smoke ring is really a tiny little bit of joy. The smokyness and the flavors are undescribable. Well, I guess if I had Kris over for dinner he could reduce it to prose. NO sauce required (although allowed if you desire) plenty of flavor from a dry rub and the smoke. The meat itself is so porky I want to cry.

try a pork ribeye roast , over mesquite ,, that is one great looking pork butt , what flavor does applewood smoke taste like ?In south Tx we donot have applewood .love that crust on that there butt ...

I am a tri-tip kinda guy. Family like it more. But $1.69/lb pork butts got me salivating! Applewood and other fruitwood seem to be a neutral smoke. I use a lot of Mesquite. That and Hickory each have a very distinctive flavor. But the fruit and nut woods all seem to be just a neutral smoke flavor. Thanks for the compliment on my crust. That means you know what I did to keep the temps correct for 6 hours! Wish I could have had you over! I am hoping to retire to Corpus Christi. We'll be neighbors. Then we can hunt with Mel!
