So i have read in a couple of places on the internet of people using Copper circuit boards as a medium for diamond polish, The theory is that copper is soft and the polish will embed itself in it. Would Copper Pie do the same thing? I would think that would actually be the better choice since you can get it for 10$ a 10' pipe and could customize its shape to fit anything you needed to polish or sand.
Any opinions on this?

I've used copper pipe and 80 grit corundrum as a hole saw, works pretty good

Yes, I knew and old guy that drilled holes with copper tubing and 60/90 grit. Took a long time but worked. While you are experimenting maybe try bronze brazing rod. It is available in really small diameters. Or copper wire if solid. May work better for small details than pipe. Of course, phenol points are about $7 each and reusable. It's only money. The old standard was the wood skewers for Shish-ka-bobs.
