Thought I would start this topic up again.... I know everyone agrees on food and eating..LOL Today I'm making homemade spaghetti sauce for our church lunch Sunday,also have some chicken boobs out for supper tonite,probably grill them,if not I'll make them into finger slices,rub with olive oil,roll them in flour and Parmesan cheese,salt and pepper,lay them in a greased glass pan and bake.. But for lunch,I'm grillin' up some German "Brats"....Serve them on a hard roll bun with lots of mustard and horeradish... Whats for dinner at your house? ?

Microwaved TV dinners with plastic utensils that don't need washing... LOL!
Unless my plumbing gets hooked up today, which I am not going to hold my breath for:).
I want to make homemade spaghetti sauce now that you mention it...

Nothing fancy,just gonna fry up a couple lbs of yellow cat. Flathead,Appaloosa catfish,not Kitty!

LOL, Had home made spaghetti a couple nights ago. Chicken and rice casserole last night. Tonight it's left overs of the last 2 meals.

Well, it's not dinner, but... Turned the oven on to cook yams for the dog. I just cook them on the rack, after being sure to poke a couple holes in them - have had one explode in my oven, what a mess! It smells pretty good, until a large amount of the juice drops to the bottom of the oven (which I have learned to cover with a sheet of aluminum foil, turned up at the edges) and becomes charcoal-like burnt sugar.
Right after that, I turned the oven down abd popped in some chilies (red jalapenos, and some other type of small hot chilies) that I had washed, halved and placed on cookie sheets. I don't have the oven turned too high, so I can just smell them. If it's too hot, the fumes will chase me out of the house! When dried out, I will grind these up in a blender for home-made chili powder, that is 100% chilies - nothing else added. Jean

So what's your temp and time for roasting chiles properly? I seem to burn them when I try. We're grading the back yard for the concrete slab for the shop (yay!) so it will probably be takeout from a new chinese place by Home Depot when I go to rent the compactor. Tomorrow will be crock pot roast with lots of veggies.

Lee, actually I'm not roasting them - just drying them. Roasting is my husband's job. He put's the washed, whole, jalapenos in a plastic bag, adds a little olive oil, and squishes them around to get them coated. Then he puts them on the grill, and turns them as necessary - maybe every couple of minutes - until they are done. It probably takes about 15 minutes on the grill to get them done.
When he does it, they always come out great. When I do it, they tend to get a little charred... When they come off the grill, you can put them in a bowl and cover with foil. The steam helps loosen the skin, so you can pell it off easier. Jean

I just load up the racks in a dehydrator with halved jalapenos, and rotate the racks every few hours. Takes a day or 2 to dry them enough for grinding. I grind them in an old blender on the back porch. Last time I tried to grind them indoors, the jalapeno dust in the air had the dog and me sneezing for hours. For whole chilies, I just thread them through the stem and hang them by the fireplace to dry naturally. Just pop the stem off, break them in half, and in the chili pot they go.
Oh, and I grind my jalapenos seeds, membranes and all. Don't want to loose any of that good fire.

tri-tip and pork butt 6 hours over apple wood, Chino style potato salad, Santa Rosa plum salsa, corn chips and who knows what else the wifey will get.

You'd think you'd appreciate it, it's a big brecciated ROCK. Not all of us were born with a solid platinum spoon in our mouths. I'm thankful to have a formica countertop to prepare food on. Doesn't make the food taste any different, and I don't have to rub the noses of those less wealthy in it.

I got it because the RO company/Insurance had to pay for the leak under my sink, and I paid a bit extra to get granite instead of formica. That is hardly a platinum spoon. If I wasn't inconvenienced without a working kitchen for nearly 2 months, I wouldn't have the new countertop at all. We are not 'wealthy', we are middle class.

Just finished my brats...........MMMMMMMMMMMMMMM good,mustard and horeradish sauce was the kicker!!!! Don,thats how I do all my peppers when I dry them(seeds and all)Habaneros are the worst for chocking a guy out! Dry five different hot peppers,than mix them together and blend,makes a great pepper shake for most any food...I use it on eggs,pizza,some sandwiches..Plus chili and burgers.... I use a coffee grinder for my final stage of grinding...(I used the coffee grinder one time,wife gave it to me after that)...I'll buy her a new one-LOL
