Just finished my brats...........MMMMMMMMMMMMMMM good,mustard and horeradish sauce was the kicker!!!! Don,thats how I do all my peppers when I dry them(seeds and all)Habaneros are the worst for chocking a guy out! Dry five different hot peppers,than mix them together and blend,makes a great pepper shake for most any food...I use it on eggs,pizza,some sandwiches..Plus chili and burgers.... What ? No kraut on the brats ? Man Mike, you left half of the good stuff off. Damn, now I'm getting hungry.

Friday is ice cream cone day here. I make us the biggest possible, and we sit outside happily licking our ice cream.
By dinner time, we are too full to eat a real dinner, so we split an English muffin. Husband has jam and butter on his. I have just jam since butter makes me sick. I make all our jam.
Your dinner sounds wonderful!

Hey Mike, I get my brats from a German run meat market about 5 miles east of town. On request they'll make them with sharp cheddar and jalapeno chunks in the meat before they stuff the casings. My kraut and brown mustard come from the Hutterite colony north of us. They make it the old fashioned way, and bring it to town to sell.

Grew up with a transplanted Cajun buddy in California. His mom was the best cook in the darned state. Had many good Cajun meals at his house. His moms home made breakfast sausage was to die for. It'd make your mouth burn and water at the same time. And the pralines she made ? Yummmmm !!

As for kraut.I had my fill when I was a kid(Dad made it,now my brother does)...I eat it with homemade weiners,soaked in kraut for three hours on simmer(MMMMM good)... I finally found a place here that sells homemade saugages and cuts,I love it.....Thumbs up..(I make my own breakfast saugage,Salami and bologna......But buy my Brats..(So far)..LOL As for gumbo,take the shrimp out and I might try it..Not a shrimp fan..I eat deep fried shrimp,thats about it. Yesterday I was going to grill chicken,but changed our mind and cooked in in sunflower oil and diced it,added taco seasoning....Made soft tacos.. Could only find the regular refried beans,so added some ground Jalapeno dust to it to spark it up a bit(YUMMM)...Wife likes it that way too...Some tomatoes,lettuce,sour cream and hot sauce.. Have enough leftover for supper tonite.... I think when it cools down a bit,I'll makes some "Hoppin' John",thats a Cajun dish too...Its so dang good!!!

well, the tritip is in the barbecue. Only 5 more hours to go! I am a little pissed at the firewood place. The wood is full of insect holes. I'll bake em out in the sun, but sh\t I paid full price for the wood.

fossilmanApple Wood. I cook with wood not charcoal. Cooks way longer on just a few pounds of wood.

Here is my barbecue. ignore the blue tarp, I am cleaning up today and haven't got to that piece yet. It looks smokier than it actually is. I am adding a new hunk of applewood. I add about a pound every hour. I start with about 5-6 pounds to get things going, warmed up and a bed of coals started Then I can just keep a single hunk in there burning adding a new hunk every hour or so. Maybe 12 pounds of wood for a 6 hours smoke. A single bag of firewood lasts me all summer for $12.

Shotgunner...........You know buddy,depending where you live.I would go find some old apple trees that need cut down and harvest your own wood,prepare it the way you would prefer! Any apple groves your way?

There are some apple groves about an hour east. A little town in the mountains gets cold enough to reliably produce apples. It would cost more in gas and time to go get my own wood. I spend $30 a year on wood. Hardly worth the effort.
On the other hand, I drive 100 miles one way to collect 25# of rocks! lol
