Supposed to be coldest T-Day in 100 years John. The convection oven does the jerky at 175F. Will get 2 or 3 more in the next few days to keep the oven going. To help heat the house...
I have permits to protect my crops. So i kill burger and roast in the summer when the deer are eating greens and browse. This winter meat is much more bitter from acorns and more acidic foods. OK for
jerky and 3% beef fat burgers. Still got a rut on, probably about a week longer. Cold week may put a big buck in my future.

Great to keep warm weather deer up and moving beef. Other than that cutting and burning fire wood is best game in town.

Best way there is to stay warm and not be sedentary when it's cold out, cut and split firewood. Stay warm.

Have you ever tried a venison roast cooked with bacon strips laid over the top? To die for. Then pour the juice over rice. Double taste bud whammy. Jim

Have cut medallions wrapped in bacon. Same thing Jim. I try to eat deer cause it is low in fat. The bacon may reverse that effect. But who cares.
