Scott, do you cure the olives? I had access to a prolific olive tree once, so researched how to prepare them.
Quite an involved process.
I decided I liked the canned, pitted black olives in the grocery store just fine!

I have cured my own. This year looks to be a bumper crop, so I will, maybe, try a couple different methods. Oil cure, salt cure, and lye/brine cure. I did lye/brine a couple years ago using olives from a local shopping center. The first batch was like potato chips. Bet ya cant eat just one. Salty and olive-y happiness. Friends begged for more.
It looks to me like ny tree may have 100 pounds! Maybe a couple buckets instead of a couple gallons! More to follow in August/September depending on weather.
