Are you going to eat those? Yes Dave. A link to recipes...Bet you got plenty down your way. Cut them before they get taller than about 8 inches. After that they start to get bitter. www.ifood.tv/network/bamboo_shoot/recipes

Mmmm, stir fry. That is cool looking, how they come up. Should be harvesting them and selling to the high dollar restaurants. You can kick them and they break off. Or spank them w/a broom stick. They spring up in every available orifice and cranny. Got a 3 gang mower w/it's own engine that is pulled behind the ATV. I cut the end off so that 1/2 the end blade is exposed allowing you to nip the shoots and mow at the same time. The shoots reach full height in one cycle of the moon(30 days) and never grow an inch after the 30 days. 60 foot bamboo grows 2 feet/day !

thought I seen some documentary where these Vietnamese had some prisoners and starved them then fed them bamboo. War camera men I think it was. Some of them died and others puked and pooed until they about died. They fed the prisoners a big meal but didn't cook the bamboo. Did it on purpose.
quick google Bamboo plants are not toxic to humans. However, depending on the species of bamboo, cyanogenic compounds may be present in the shoots, so they should be cooked before consumption

And this from your article Brad: "It was meant to be our “last supper.” Before we could finish, we had severe stomach cramps and dysentery. The soldiers had poisoned us by not boiling the bamboo twice to remove the cyanic acid. Unable to get out of her hammock, Betty lay for three days in her own defecation before she died. They wouldn’t even allow me to clean her up." Some are worse than others. P. Dulcis is supposed to be real sweet. I learned to cook it good. Stir fry is risky. Boiling the heck out of it works best. Just made me vomit. that poor gal was very weak. You can taste different varieties and some are close to sweat when raw. Others very acidic.
