I went out to couple of commercial restaurant supply houses Searching for pressure cooker. No one carried any. The issue of Boston came up. A few stores (like Walmart) carry them. But not heavy duty ones. You have purchase them on line. Tracking purposes, I suppose...

Precision machined “metal to metal” sealing system. Positive action clamping locks align the cover to the base, forming a steam tight seal. I didn't think of that, maybe look into it. Funny, some who see it say "wow, cool", and others get the willies just seeing that "ghost". It is about 3 times longer than most found here. I've always been fascinated by snake skins, like shedding organic clothing that has become outgrown. Never knew they shedded so many times in a season. I have noticed over the years negative reactions to snake skins. Snakes just bother a lot of people. By design I suppose.

No, I've never used one, James. Years ago, I preserved some vegetables, but the only thing I put in jars these days is jalapeno jelly. That can be processed in large stainless steel pot.
IDK, I think I'm a little leery of having all that hot water and steam under high pressure in my kitchen.

I said wow on the deal, Carol said wow on capacity. Serious canning tool. They recycle a lot of restaurant stuff there. A lot. Mostly stainless. I figured it would cost a couple hundred new, 500 was a surprise. taking up a bit of cooking lately, may put it to use, not sure yet.
