A friend went on a Texas hunting trip with some buddies in March, and got this bad boy.
They were hunting about 15 miles south of Pearsall, TX. He said it weighed probably around 100 - 120 lbs, less than 600 for sure.
He brought the head home as well
and cleaned it. Had to glue the teeth back in afterwards. Had some tusks I wouldn't want to meet in the bush!
He bought some jerky mixes from Cabelas, this was made using the pepper one. Wild boar nothing like domestic pigs, definitely not the "other white meat." Tasted almost like beef pastrami, oh so good!
Also got a couple breakfast sausage (which we had Saturday morning), two brats (which we had for dinner Saturday night). It was delish!!! Still have two andouille sausage and some boar/burger meat.
My friend enjoys the hot ground chile powder he gets from me. He let me know he was almost out, and asked if I'd like to trade for the boar meat. He didn't have to ask me twice!

cool deal! those young hogs are some good eats for sure!
I wouldn't risk jerky though as the temps may not get hot enough to kill any parasites, and wild hogs are often loaded with em!

Got a sounder of about 20 or so of those coming around my back game fence nightly. Babies are cute but the big mommas are nasty looking and, because of our no hunt policy, not even scared. I would not want to go for a walk outside the fence after dark. Bad things could happen. Sows stand there and gnash their tusks and it sounds like a big knife being stropped. We had a dead fawn out there the other night and next morning, only tiny little bone fragments left. Not even any hair around....Mel

Wouldn't want to get trichinosis or some such thing. It was cleaned, cut-up, frozen and bagged before flying home in March. (Bet ya didn't know pigs could fly, huh?) Jerky and sausage not made until just recently.
The sausage is so lean, my friend said to take care not to burn it. The brats were excellent, the breakfast sausage superb!
Wow, Mel Sabre52! I guess they are pretty much opportunistic feeders, will eat anything. And will run off anything that bother them or their babies, would not want to be near. Your description of the sound of those tusks gnashing (big knife being stropped) would send shivers up my spine for sure!

I'm still looking for a land owner who doesn't want me to pay $X000 to shoot the things, I'd fill a few coolers and sausage the whole mess!

I have an invite to go near Wichita Falls Texas hog hunting for free. Just need to find time this fall to make it happen
The two ranchers have been charged by sows when checking on their cattle and always pack a .44 magnum when venturing out.

That would be great if you guys could hook up and make that happen! Crossing my fingers for you! We have large feral pigs here (San Diego back country), but so many hoops to jump through - and costs - to get those permits.

Got so many hogs here locally that the neighboring ranch just traps them, shoots them and puts the out for the buzzards. And, they do eat anything. What really pisses me off is the last tow years, the damn things have beat me to the pecans. They also hunt and kill deer fawns or sickly deer and even our baby blackbuck or mouflon which are a cash crop here. We're supposed to start up a trapping program soon is we can get folks to do it....Mel

They only extended permission to me with the understanding I not invite anyone else along. After the first trip I might be able to get permission to bring another person the next trip. If this works out, I would like to go at least twice a year as it's only a 7 hour trip from my place.

Way cool, Jean. Went down a couple of times west of Abilene hunting them when we were still in CO. Friend of a friend had relatives or something, we had access anyhow. Put a freezer in the back of the pickup and kept it plugged in while we were there and plugged it in again when we got home. Worked great. Took one about that size and put him in the smoker whole. Oh. Oh. That was too good! Had a bunch of people around that day and when they were done there wasn't a scrap of meat left on a bone. Good eating, but they sure can make a mess of the land.

Anyone with the time/distance opportunity might look into hunting in Oregon, looks to be a lot more free than other areas. A former co-worker has hunted them, says delicious, a bit pre-spiced with sage. My granddad used to hunt them in AZ, told a story of a fellow whose gun jammed; chose to climb a cactus rather than face piggy.

We used to eat wild pigs in Germany a lot. They're a big nuisance there, and a huge traffic danger. In a little car, hitting a big boar can easily kill you. Haven't had any in the US yet, wonder if they taste different. In Germany, they like to eat acorns and chestnuts, but there's hardly any chestnuts in the US.
