More bourbon than rum is made in these parts too. No raw material for making tequila. Age wouldn't be important in alcohol ABV Only the amount of starch in the raw material and how efficient the conversion from starch to fermentable sugars is as done by alpha and beta amylases in the rest or lautering step. A bad conversion of the mash early is the main reason for low abv. I would guess that the older or maybe the more stressed and less water would make the taste stronger. Most of the flavor would be carried over in the distillation process if using a pot still and never in a fluted column or a thumper (doubler) Agave are like salmon, at maturity they die after reproducing. Harvest after x number of years. After you got me thinking of nopales I bought s jsr while at the store YUM. Walmart carries them. Didn't buy tequila, this is Colorado and we have lot of Bourbon whiskies and some rums as well. Grin,,
In Peru they start a fermentation from the saliva of an old woman without teeth. Serious, some type of bacteria in her gums apparently. Maybe you are aware of their process. And then they either ferment with or add other herbs(some has to be opiate based) to their liquor. They call it 7 Root. Now a 1/4 pint of that liquor will take you to other places including hallucinagenic effects. More of a substance high than an alcohol high. You are very knowledgeable, have you worked in this industry ? "This is a list of amylase induced fermentations. Saliva can be used as a source of the enzyme amylase to break down complex sugars into simple sugars. These simple sugars can then undergo fermentation by micro-organisms. Like a Lambic ale.. Don't like wild yeast tastes. Same on wines if you aren't careful. I know if you wash corn before fermenting you best get it cooked fast or it will start fermenting wild yeast. In rum making after you finish a rum and the left over used up depleted wash stil have a viable bacteria living in the dunder and it is what flavors rums in Jamaica. Have never worked in a distillery. DId brew beer commercially for a business that friends owned and I was the money behind it. Protecting my investment.. grin. Never worked for another guy. Always ran my own business and have never gotten a distiller license. Cant even have a huge private still piled up with guns and rocks . Be illegal under fed law like MJ and I wouldn't want to break any federal laws. The government knows what is best for us.. grin. or so ahm tole..

The Rocks were so angry they made squash boats out of the squash   Texas Two ended squash and schizophrenia squash, the Rocks did this to them too by distorting their genes with poisonous rock dust. Maybe snuffy can't even do this.     Triple personality squash  The poor squash before the party  So I punished 2 of the rocks by grinding them into a sphere and a discoidal and chunking them in a tumbler.     The End Sure am glad to see you play with your rocks like this. Thought that my Hello Kitty collection playing with my rocks wasn't normal but now it seems that I'm right in the normal range for agate lickers. hehehe |

You are also our go to guy on figuring out the new people on their pictures and are great when fire enters the fray. I am not hot stuff on rocks but like them and learn more every day. Even smart guys like Mel, James, Lynn and ladies like Tela and Jean started some where. We're all good at something and your part is good. That man o pause thing is hard on yah> hehehehe Sold my big Harley cause of the torn double rotators making it hard to breakand clutch and hated it. Have adapted. Don't hear me whining about not getting my pictures to size up .. much... grinning at Dave,

They say the body gets more tolerant to hot stuff over time. I guess I'd have to agree. I put two jalapenos in my eggs in the morning, and then that's sprinkled with smoked ghost pepper flakes. Don't have issues after the fact. Dave Habeneros and cactus, you western folks eat some foods w/attitude. Make liquor out of cactus. Have plants with thorns that puncture Michelin tires. Sun strong enough to fry eggs. Maybe our humidity trumps you though. It can oppresive. Lots of Phoenix and LA transplants here. Seen the humidity crack them. They stop bragging about 120F when 95F/100% humidity rolls in their first summer. amused by this on several occasions. |

Cliff, why don't you have rotator cuff surgery. I need it but can't afford the 6 month healing process. Are your shoulders operable ? Mine seem to keep getting worse. Strength training helps, but gets to a point where it aggravates them more often. Not much else to do after that. I find myself using them less and less cause it hurts, they are getting weaker. And effects sleep due to pain, vicious circle. Doctor requires stop smoking, they won't operate on active smoker. But that's not a problem. Lol, let him operate and start back. Left shoulder MRI'ed in 1998, verified a full supraspinatus tear. No doubt, it has been torn 20 years. The other feels just as bad. But I did well with left for 15 years after the full tear. Granted, was in much better physical condition. Younger. I am not ready to slow down or be crippled by this. what is your plan ? I am 60 yrs old average build. 6' 2" 200 lbs. Active. I also broke the shoulder socket ~20 years ago., but it healed back in place fairly well. Most rotator cuff damage is the torn supraspinatus muscle. Pretty sure other tears occur. Do you have multiple tears ?  |

Would rather wear out the ole body than to have it fat and lazy sitting in an office all day. Glad I didn't choose that path. How's life with firepit business and the nursery closed? Easier but for a hyper guy like you it opens other opportunities for fun and interesting projects. Bet you have a dozen little projects on going like I do. Grab hold and hang on in our worlds huh? My life is a spur ride for sure. My problem isn't like some people. Mine is a dang camera and posting pictures. Not important in my world. Maybe someday.

OK, sounds like you had the surgery. How is that working out for you ? So a knee is next on the agenda. Sorry to hear. Bionic old men. Surgeons keeping us glued together. Old guys and cycles is not such a good idea. I get that. We don't heal well. Of course the cycles will kill you regardless of age lol. The fire pit thing is easier money physically than the aquatic plants. And less tending required. Live stuff requires all that attention as you are well aware of. Yes, I am adapting very quickly to not having plants anymore, big relief. Nice to have spring and summer to myself. 26 years, plants had become a duty. Smelling the roses more. Ready and AM slowing down. No couches though !! |

Worked in big Hispanic areas all my life and for years had Mexican food, the "authentic stuff", for lunch almost daily so I guess I'm pretty used to the heat. Tried a lot of ethnic foods and Mexican is my definite favorite. Enjoy the regional differences too. Much more variation than one would think....Mel

Shoulders are fine now, just one handing a darn heavy B&B spruce cause didn't want to walk back down to the tree lot for my drinking cup. Dummy. Then blew out the other by using it hard while the right side was healing. Yep Loved the bikes for sure. That big throaty Harley telling your friends you were closing in on their position. Laid it down on a gravel accumulation at a paved intersection. Got on top of the bike and just lost a couple pegs ground off. Yep a time to hang up yer spurs if you don't want maimed for life. #1 cause OF DEATH FOR OLD GUYS IN COLORADO ! Next one will be a quad and maybe a toy hauler. Right about the constant tending. I am a big time tender of everything from plants, to children to old people. Its become my nature for sure. Just got in from changing water in the dawn of a new day. Cool, moist, quiet, and walked the acre sized lake on the property. Usually surprise a critter or two but not today.
Have had many migratory bird types visit from pelicans, Egrets and many others. Nice walk.

And a couple fresh green serranos with everything. Maybe the real "chile" with lt Tomatoes, chilis,onions and spices blended after roasting. Served warm and then after it cools in fridge like gelatin and tasty over anything. Yep Mexicans look at us gabachos funny when we talk chili. Ours to them is frijoles with beans and carne molido. Had some nopalitos for breakfast just a bit ago because James reminded me of them.

Darn fancy nursery operation coloradocliff. I stuck to the wholesale side for what it's worth. Sterile, got my orders on Fax and email. Did not deal w/many people. Had off time fall and winter. Would usually deliver in a pick up. Min delivery was $800. Average $1200. Pulled a trailer for larger orders. Not a big income machine at all. Grew about all the stock. Aquatics expensive and fast growing. Had to focus on habitat, water holding containers and earthen ponds. Weeds were #1 enemy next to critters. Perhaps consider a working partner and let him buy the biz over time ? Damn if I did not hire a friend to help weld fire pits. He has inquired about being full time. Me thinking about engaging him to do more of the work and slowly let him work into buying the biz. But he is one in a million, super cool guy and hard hard worker. Partnering is potential for problems. Fine operation  |

Acre and a half of greenhouses. Lotsa work maintaining and producing them. Want a clean sale. Seen other people go thru heck trying to deal with partners and wanna be buyers. This particular nursery is the last of three big ones I built , operated and sold or are selling. Hyper here. HAve a serious buyer looking now. Helps. Not impatient to sell but woud lke to be in your position for sure. Like it that the friend helping you is interested in full time. Hard to find employees here. Have a bunch but am short handed. Saw the partner thing many times. Would never want one. A "beta" partner would drive me crazy and 2 "Alphas" in the same pen will fight. Where you finding Muriatic acid (HCl) locally? Packaging or molality not important. Don't need to be pure. For wood.. Sure liking how you got the picture nice and big. Size matters huh?
