We will be leaving for for up to a week. Is it OK to stop the tumbler until we come back? I would be afraid to leave it on in case it has problems.

A rotary just leave running, if you are worried about a leak put it in a plastic tub or something similar. If you do not want to do that just do a cleanout. Some people do prefer to leave the rocks wet.

if it has been grinding long enough to get a good mud built up you may wish to clean it first. The mud will settle and harden a little and it may make it more dificult to get rolling well when you get back. However if you leave it you can still recover. not the end of the world

If you worry about what "could" happen while you are gone on vacation...
Just stop the load and do a GOOD clean-out of both tumblers and rocks... then Bag-um and Tag-um for your return. Just start them in the same grit stage that you left them when you return.
As mentioned above... The slurry in the tumbling load can settle to the bottom of the rotary tumblers and harden like a cement. It will also harden into all the cracks and crevices of the rocks as well if not rotating.
