The lotus have started setting seed in their pods. The seeds are soft at this point, similar to a medium acorn with a soft easy to remove skin. Taste is quite palatable tasting sweet and nutty. Production is high and collecting the seed is easy. Used in making breads too. After the seed hardens off it has a hard shell. Lotus seeds estimated to be 5000 years old found in Egyptian pyramids were germinated. If you grind a breech into the shell say with a grinder they germinates in a few days. Water can enter the shell from the inside and soften it. But not from the outside in. If a stem is cut underwater with strong sunlight carbon dioxide bubbles out of the stem at a rather high rate. On a shady day very little CO2, a primitive plant with high metabolism. Probably a typical plant of prehistoric warm ages. And is found in fossils. N America has a yellow version, pink versions are from Asia and Africa. They have both natural and man made hybrids. the rhizomes are edible. Grown in large lined ponds for access to rhizomes otherwise deep digging is required.

I love Lotus. Used to use the dried pods for making wreaths. All sorts of smaller dried items could be alternated in the pod holes.
