I would love to make some cross-shaped cabs, but when it comes to sanding and polishing, the last thing I want to do (as I have seen done when people make heart shaped cabs) is stick the cab on the edge of my wheel. Is this something I could work on with a dremel? Any thoughts on this appreciated!

Yep, a Lot-O tumbler does the trick for me. I make lots of crosses, and they all go into the tumbler.

I lap cut the outline and then use a cut off wheel with my flex shaft to make the shape I want. Basic carving techniques are needed.
I can trim it up and carve shapes and contours as well.
Rio has a good inexpensive flex shaft. Diamond cut off wheels are cheap everywhere. Diamond carving burrs at various grits are also inexpensive. Plus you can sand and polish these making your own wooden wheels or getting them at KN, DP or others in felt or leather or other mediums. CO polish works well on most stones. ZAM is great on the softer stones.
