Mine is 5' long - 4' wide and 3'6" tall, plus has caster wheels on it...Made it out of old wood from a 112 year old grain elevator they tore down...

Unless it is an island you can get all the way around, anything over two feet deep will become a stuff [junk] collector in the over 24" area. My experienced 2cts. Height depends on your height and preference. I like 40-42".

Are you using wood or some other material?

I like using 3/4 particle board for a top over a strong frame. 1x2 border around the particle board to prevent chipping of it. When it's all built, I brush or pour on a very thick coat of oil base Varathane, takes a month to dry well but makes a good work surface; not too cold in winter and quiet to work on.

For the one bench that I built, I used this. Shelves and workspace are 2' deep, about 34" high (stock), and 6' wide. I did not buy or use the upper shelf brackets as depicted in the photo...I only bought legs to build the lower unit. The beauty about buying this leg setup allowed me to set my own custom measurements. I used 3/4 MDF for all of my shelves. For the top, I have two stacked 3/4" MDF pieces covered by 3/4" stall mat. This puts things at about 36" high or so. 40" as you're looking to build, seems pretty high. If that's what you're ultimately looking for with something like this, you'll have to stack upper layers. With a neighbor, I was able to put this together pretty quickly. But, it's definitely a two-person job. I looked for photos, and I can't find them.

I don’t know that mine is perfect, but I like it. I made it eight feet by 31 inches. I would have just bought a pre-made countertop from Home Depot, but those were too narrow for a trim saw that I had. So I built my own and put Formica on it. I love the storage underneath, which was my main reason for building it.

If you stand and cut cabs the the above image is great. If you sit to cut then I would want some place to put my knees. This is important to know.

I have that problem with my current bench... which a long chest of drawers. Good for storage but nowhere for knees. I actually thought about picking up a 24 x 36 cart at Harbor freight for $57.

I have an eight foot banquet table (the kind with folding legs, I got it from a church hall) on the other side of the room to sit at. I've thought about building another cabinet like in the picture, but I like to have a place to sit.

The doors are 10" wider than the racks are, also the bench is short. Built it for my 12 year old daughters lapidary area. Since I am 6' 3 I would have needed a deeper and taller bench. If you use doors the add a few coats of polyurethane to make it water proof. We did not thinking not much water would get on the bench then my daughters friend came over and left the water valve open on the gravity fed water bucket for the poly and poof water all over the bench... kids...lol

Easy fix for that long chest of drawers. I “borrowed” a five-foot long bureau off the wife. The cabber’s mounted on a plywood base which overhangs the bench. The arbor ends up 4” in front of the drawer faces and the water trays about 11” in front. A perfect ergonomic setup for my favorite bar stool, also borrowed . . . it kinda walked out of Wilson’s Tavern late one night back in the Nixon era. : )
