I have a super thick thunder egg that is domed already on one side. I know this sounds obvious, but should I put the groove in it before I finish the other side? It seems like it would be easier, but I am worried about cutting the grove in the wrong place.

I never cut groove. Once you mark the girdle line for the other dome it will tell you where to cut the groove.

I've posted in the past about getting even girdles being difficult for me. I've figured it out. Mainly a lot of practice.
Before dopping, I put the preform face up on a metal template near the edge and pencil flat on the table top and rotate the preform against the pencil point. I get an even 3mm line.

Unless you cut your grooves freehand with a Foredom or a Dremel, it’ll be a lot easier cutting the groove before the other dome.
