So, I've been seeing some ads lately...and some talk on my wife's TV shows that were saying Macaroni and Cheese was a side dish for Thanksgiving. Never in my almost 50 years had I ever heard of Mac & Cheese as a side dish on Thanksgiving! I also know some items may be hard to get this year...
So I was just wondering what's on everybody's Turkey Day dinner menu this year. My wife and I are going out to her parents farm for dinner...and this is what she said was on the menu for us this year (yes, it's a big family):
Roasted Turkey Smoked Turkey Ham Stuffing (inside bird) Mashed Potatoes and Gravy Sweet Potatoes Lima Bean Casserole Cheeseball (hors d'oeuvre) Pasta Shrimp Salad Brussel Sprouts w/Bacon Sauerkraut w/Bacon Cream Cheese and Strawberry Jello Salad Garlic Mushrooms Fruit Salad Homemade Dinner Rolls Relish Tray (hors d'oeuvre) Green Bean Casserole Cooked Creamed Carrots Jelled Cranberry (Some more as some people haven't committed to what they're bringing yet! LOL)

Holy crap, that's a lot of food! I'd be in a food coma for a week.
We're having what I always make (it's just me and Vince):
Roast turkey dressing my mom's special sweet potato balls asparagus spears cranberry sauce
I haven't decided if I'm making something for desert or not. I may be lazy and just buy a pie. LOL!

An Army friend originally from Anderson, Indiana who I have maintained contact with since 1969 says mc&cheese was always a big side dish at Thanksgiving and Christmas dinners. Must be some regional thing, I had never heard of it either here in W. Oregon.

Mac and cheese as a side dish??? Never! Main course all the way. 😂 We generally make a turkey, rolls, pie (or crumble), and other delicious things. Memory is failing me on what else. After all, it has almost been a full year!

For the worn out cook, here is a simple dessert. We like it, it’s easy, and it is pretty. hummingbirdstonesINGREDIENTS 21 oz can of cherry pie filling 15 oz can crushed pineapple. Not drained. 1box (18oz) box of yellow cake mix. Dry. 1 cup butter or margarine DIRECTIONS Grease/butter 9 by 13” pan. Dump in the undrained pineapple Spoon the cherry filling on top and spread evenly Dump dry cake mix on top, and spread evenly. OPTIONAL: sprinkle nuts on top Slice butter and place evenly on top. Melted butter also works. BAKE at 350 degrees for 1 hour Cool on counter for 1 hour. Enjoy! Edit: I buy all the ingredients except the butter at the Dollar Tree.

Do tell some more about those! mohs - If you were up this way, you'd have a seat at the in-laws table with us...and be treated like family within the first three minutes! quartz - Thanks for chiming in about the mac & cheese...I'm still in shock about this one! perkins17 - Yeah...it's been almost a year...and it's only three days away...you should have the menu together by now! Oh wait...you've been too busy with a new tumbler! Pat - Thanks for posting that! So anyway, I will be alone and unsupervised for the next week so who knows what kind of trouble me and the dogs will get into I thought I was cooking up a plan to smoke some meat at my youngest's house but now their little one is sick and since nobody likes a sick kid (kidding) that plan is in jeopardy. TG might get rescheduled to Saturday.

rockjunquie - I'm surprised squash isn't on "our" menu...but I know my brother-in-law had a bunch from his garden...so I wouldn't be surprised if it made an appearance on our table as well. And are you serious about the Mac & Cheese?!? When I was a kid, Mom made homemade mac and cheese like as a treat on TG. Years later... my one grandson will barely eat any food, but he loves mac and cheese so we put it on the menu. (Stouffers)

What are/were you planning on smoking? A "rescheduled" holiday is STILL a holiday! If it happens it will be a rib roast or if I'm feeling rich and daring, a cut-reattached prime rib roast. We thought about boiling a turkey in hot oil but with little ones and dogs running around that idea fell out of favor pretty quickly.

Sweet Potato Balls
Boil sweet potatoes until tender, drain and let cool enough so you don't burn your hands. Peel potatoes and put in large bowl - mash up with a fork Take a handful of potato and smash it down in your hand. Put a marshmallow in the middle and make a ball. Roll the ball in some crushed Corn Flakes (I just crunch them between some wax paper gently with a rolling pin and dump them in a shallow bowl (like a pie plate) Put in a baking dish Melt butter in a small pot Sprinkle brown sugar liberally on top of balls and then pour the melted butter over them Pop in the oven at 325 for 1/2 hour.
I don't have exact amounts. This is one of those recipes we just grew up making and we never measured anything. For a 9x15 backing dish, I'd probably use 2 sticks of butter.
If you get it timed just right, when you cut into a sweet potato ball, the marshmallow will be just melted. Leave it in the oven too long and the marshmallow disappears. Still tastes great, though!

hummingbirdstones - Robin, thanks for posting this! They sound scrumptious! I know my wife has some recipes from her mom and grandma that say "a pinch" or "a bit" when it comes to certain ingredients! LOL - That's old-school!

I've had a cranberry thing going since I was a kid. I think it was one of those recipes that came home from school, in you best kindergarten handwriting. Back then it was jellied cranberry with mandarin oranges and orange jello mix.
Now it's a little more sophisticated. Boil up whole cranberries, strain, add a can of drained pineapple, drained mandarin oranges, a couple tbsp of honey, and a pinch of salt. Immersion blender it all together and chill. It's kind of a sweet and tangy dressing for your turkey.
In CO, landlords introduced me to a cranberry and horseradish blend... And... It actually worked really well. Kind of surprised, but it was good.
Only way I can figure Mac and cheese would be from scratch, where you got a rou going to build up that sauce from the ground up with milk and cheese. Sticks to your ribs kind of Mac, not a box of Kraft. Personally.
