Outstanding choice this is why I love the agate family, not to mention the color patterns they can hide inside. One never knows what is hidden inside I have seen some really nice color patterns on the outside when cut the pattern can be completely different on the inside. Give my compliments to the chef!!! Job well done

Shop's open..... fresh out of the over, well, give or take 65 million years, with a batch of pastry's including Pat's request for a cheesecake. Here they be: The cheesecake, on top has some raspbbery sauce flowing thru the cheesecake layer and it has a crumble top. I think the pastry got a tad burned, but never mind, it's all good. This piece weighs in at one and a half pounds and measures 3" x 3.5" x 2" The pastry on the left, has a thick topping of mixed nuts and chopped fruit, over a layer of custard and strawberry mix, nested on a mixture of caramel and red currents. It weights in at one pound ten ounces and measure 5"x4"x#3" The middle pastry is a rhubarb, chopped plum, peach and hazelnut pie over a vanilla and raspberry base, we like raspberry's, covered in a lite glaze. It weighs in at 2 pounds and measures 3"x 4" x2" The confection on the right, partially seen will be discussed after we get a better photo. It has baked apples and small berries. TBC...... Shop's open... The Sentient Cookers from The Big Crazy's Pastry Shop had a difficult time in full-filling the initial Key-Lime Pie request, but being what they are, all seeing, all knowing, transcendental beings, they teleported back to their origins and discovered key lime equivalency ingredients in the limestone tufts surrounding the pastry they were preparing. This was a big deal for them in that they could now full-fill a request. Here it is........ The confection is topped with a puree of hazelnuts, vanilla icing and some apple crumble. Weighs in at 1 pound 5 ounces and measures 4"'x 4"x 2" Here is a better image of the confection that was posted in the previous commercial. This is a Holiday Pudding, consisting of baked apples and small berries accompanied by pineapple chunks, mango slices and roasted peaches. It is honey glazed and cooked to perfection. It looks heavy, but comes in at only 15 ounces and measures 4"x 3"x 1.5"
The cooks decided to make another Holiday Puddings, this one just came out of the oven. It has a base of roasted pineapple chunks, and is covered in a layer of toffee and raspberry infusion. It is topped with a layer of roasted pears and has vanilla and black current accompaniment. Weighs in at one pound, ten ounces, and measures 8"x 5"x 4". Hope you enjoyed the visual treats. The first offering for me is wonderful combinations that tantalized all of the senses. The blend of the cherries, currants and blackberries created an overwhelming smell that invited the taste buds to take action. Upon engagement the taste buds were not disappointed. They all agreed that this is a pastry to indulge in slowly, to fully appreciate the intricate blend of flavors. They also appreciated the delicate blend of nutmeg and paprika in the cake layers was a wonderful surprise. This blended layer can be seen in the photo. The addition of paprika to a berry pastry is an art, which must be carefully done to prevent overpowering the other flavors. There may also be a hint of powdered peppers. Maybe a smoked variety, as there was a hint of smokiness. This added to the overall appeal. Will be recommending The Big Crazy's Pastry Shop to all my friends who appreciate the finer things in life. Wow, I am totally gobsmacked. That's an incredible testament to the Sentient cookers from The Big Crazy's Pastry Shop, they will be pleased to hear your commentary describing what you saw. So now, I have a personal request being: with your permission, I will find another delectable confection and use the commentary you provided to describe the pastry.......... with respect. Well, it appears the cookers at Big Crazy's Pastry Shop have a great sense of humor in that they want us, to not only "suspend our belief," to see rocks as pastry's , but to believe the image is in fact, something else. Case in point, the image below is not what it seems, it is in fact three steps removed from what you see. First reaction, ah, a rock, second reaction, oh, a slab of meat, but the cookers have made this as a confectionary, being a deep dish desert called a "Slab of Meat." Being the third visual observation. Are you getting this? This confection is made in a seven inch square pan covered with one inch banana and nut base, covered with a date and pistachio filling and then covered with a one inch layer of marzipan infused with cherry extract. It is served sliced into 3/4 in pieces. The cookers sent off to their friends in Helijiong Province in Northern China to get a sample from the limestone caves so they could develop this confection for the shop. Here is what they created: The material is Calcite, weight is 2 pounds and measures 7"x 3.5"x 3/4" The shop will be closed for a few hours. Cheers, johnw

Shop's open again.... I asked for a more traditional sample of pastry's rather than what they provided before, so here is what they came up with. These are more like the fruit tarts I remember as a kid. Loaded with everything: apples, pears, white grapes, black currents, sliced bananas, peaches, poached pears and all covered in a baked golden syrup glaze.
Measures 5"x 5"x 4.5" weight is 2 pounds 8 ounces. Here is a closer look at the ingredients. Arguably, as real as can be, being they are over 65 million years old. I want seconds.................. A few more examples of Fruit Tarts and Pies, coming up...... Loaded with grapes and small berries with a baked pastry crust. Here is a closer look..... This one weighs in at 2 pounds 4 ounces and measures 5"x 4"x 4.5" This confection has it all, sliced apples, red berries, white grapes, oranges and orange peel, backed apple, sliced dates and a kumquat on the top. It's infused with caramel and vanilla stripes and has wild elder berries plus chopped cherries as selected toppings. Weighs in at one pound eight ounces and measures 4"x 2.5"x 3" All done for today, ovens been turned off and the cookers have gone home. More goodies will be available tomorrow. I will check the menu. It took a lot for the cookers (AKA, Sentient Beings) to teleport back 65 million years to search the limestone tufts in the region where the lace came from. I was told the earth was shaking a lot and the ground was opening up, sounds like a typical California earthquake, like Northridge, back in the day. Anyway, there was a malachite deposit there so they could work their magic to get the key lime color ingredient that was needed. This was the narrative they provided to me. Hey, but it all sounded reasonable, well, err, at least to me, when they told me their story. Cheers, johnw

Shop's open..... In a continuation of yesterdays offerings, the cookers have prepared two more "fruit" surprises for your visual pleasure. The first confection is a special compote with chocolate chunks, huge peeled plums, baked ice cream, custard and infused with layers of caramel striping and crushed cherry topping. The weight of this confection is one pound eight ounces, and measures, 3.5"x 4"x 3.5"
Here, our cookers present: A thick crust compote with all the fruit you can expect in season. Sliced pinapple, white truffles, raspberry's, chopped cherries, black currents, peeled grapes, and chocolate buds scattered throughout. baked to perfection. Wanna try a piece? This ones weight is 2 pounds and measures 5"x 4" x 2.5" The cookers at The Big Crazy's Pastry shop have several of the delicacies above at the shop. They wanted me to show you what they all look like combined, kinda difficult not to purchase, eh? We now must change over the offerings and prepare all the ingredients, so gotta run. Cheers, johnw

Yes, I too was surprised to see the big chunks of dark chocolate on the top of the pastry.
