Chili looks good. I'm having self-made meat loaf, which I like a lot but wifey won't cook because she thinks it's too greasy. But I learned a neat trick and she's enjoying this batch. Before baking, layer several slices of bread on the bottom of the baking dish. Stale bread works fine. It absorbs the grease during cooking and leaves the meat itself with a great nearly greaseless texture. I was skeptical at first but it works.
Mange, mange! Comfort food rules!

best ever baked beans-easy version. in a 2 qt slow cooker combine 2 large cans of your favorite canned baked beans,do not drain the excess juices. add 2 large cans of plain refried beans, then add: small chunks of good ham or pork- pre cooked, up to a pound. Mix well and add 1/2 cup of molasses, 2 heaping tablespoons of powdered ginger, 1 cup of brown sugar, 1 small can of tomato sauce. Mix again until it seems well blended. Now turn crock pot on high until the stuff bubbles, stir frequently as it heats to prevent sticking. (You can use a large pan on the stove if you don't have a crock pot, but you must be vigilant to stir frequently and keep the heat low or it will stick and burn. ) Other items(mushrooms, chopped onions, chopped green peppers, etc) can be added to your taste, or different cooked meats can be substituted.. quick and easy, serve with sliced boston brown bread(the dark stuff that comes in a can) and butter. I take this whenever I bring a dish to pass and always get raves.

Easy meat and veggie dish. 4 chicken thighs or 2 breasts,(1/2 to 1 lb. of any meat) boil in 2 quart pan with a tablespoon of bullion, a tablespoon of thyme and 8 cups of water. cook thoroughly and remove all bones, chop meat into small pieces. Add 1 1lb package of frozen mixed veggies, bring to a boil until veggies are tender. Serve as is in bowls as chunky chicken vegetable soup, or serve over noodles or rice. You can also add cooked canned potatoes, diced tomato, onion, celery, mushrooms, or use different kinds of meats to add variety. Experiment with seasoning to taste. I like lots of pepper!

Mange, mange! Comfort food rules! I mix bread crumbs and tomato paste plus seasonings into my meat when i make meatloaf. Keeps it moist but not greasy. Another thing i do is brush the top of the loaf with a mix of beaten egg and brown sugar.

Cream Cheese Enchiladas
Ingredients 1 lb. Chicken 1 package Flour Tortillas 1 can green chilies 1 package of cream cheese 1 container of heavy cream 1 bag shredded cheddar cheese
Brown chicken and add green chilies. Add cream cheese and heat until mixed. Remove from heat. Preheat oven to 350ºF. Grease a baking dish. Pour half the heavy cream into the greased baking dish. Spoon some of the mixture into the flour tortilla, fold into a tube and place into the greased baking dish. Repeat until all of the mixture is used. Sprinkle the shredded cheese over the tortillas. Drizzle the remaining heavy cream over the top of the tortillas. The tortillas must be moistened prior to cooking or the dish will be extremely dry. Place the tortilla dish into the oven and bake for approximately 30 minutes or until the cheese is melted.

Love this thread. This is a GREAT recipe
Spaghetti Jambalaya or Pastalaya
1 pack Sausage (Your Choice) 1 small pack boneless chicken breast or chicken tenders Seasoning Mix (frozen or in the produce section: contains onions & peppers) 3 cans chicken broth (I usually use Swanson because the can has a pop top) 2 chicken bouillon cubes Spaghetti or pasta noodles Kitchen Bouquet (found near the spices or gravy mixes)
Cut sausage and chicken into bite size pieces. Cook sausage first in a 3 or 5 quart pot until done. Do not rinse out the pot. Take the sausage out and then cook the chicken until almost done. I like to add a little seasoning to my chicken because it gives it more flavor (Tony’s, salt, pepper, etc…). Once the chicken is cooked, take the chicken out then cook your seasoning mix until the vegetables start to become clear. At this point add the chicken and sausage back into the pot. If at any time the bottom of the pot looks too dry you can spray Pam cooking spray to keep it from drying out too much. Let the meat and seasoning mixture cook for a couple of minutes (stir occasionally to keep from sticking). Add chicken broth, chicken bouillon cubes, and noodles. Add kitchen bouquet for a darker color and smokey taste(not a necessary ingredient). As the jambalaya cooks, the noodles will start to absorb the chicken broth. When the noodles are done, remove pot from heat and let cool. As the jambalaya cools, more of the liquid will absorb. If it’s too soupy you can drain any excess liquid. I don’t drain because the liquid contains a lot of flavor.
This recipe probably feeds about 4 people.

If anyone is interested I can put up my wife's chicken-n-dumplings recipe, she uses tortilla so they are light. I am at work so don't have that one.

Those look good Ed but they remind me too strongly of Mr. Bill on Saturday Night Live. When will they be mutilated with accompanying cries of "Ooooogh!" and "Owwwwhh?" Pastry torture is something we don't put up with around here!

Ha Ha Rick
Its one of those child hood memories Mom used to make them every Halloween -olive eyes, pickle nose, weenie mouth-
I carried on the tradition with my family but hadn’t had them in 20 years
I made the ones in the picture a few Halloween’s back for my Mom & sister

I was taking a drink of water as I got to this post in the thread. It was either going through the nose or on on the floor. It's on the floor. Gotta go find the dog.

OK I must confess I am a Pizza shops worst enemy. I make a great "from scratch" 100% organic pizza in the time it takes for a pizza shop to deliver me a slightly warm and sogy excuse for a pizza. This one is as I said 100% organic right down to the flower used for the crust. In fact the flower is not just plain flower it is from Einkorn grain. Which is the only weat never to be hybridized. Th pie is topped with sliced grape tomatos, valdalia onion, red sweet pepper, a variety of exotic mushrooms and pesto sliced roast pork loin and some diced pepperoni. The cheeses are mozzarella, fresh mozzarella, provalone, asiago and romano with a few daabs of ricotta. Sorry I do not deliver LOL Stu

what I made today for breakfast is fried rice patties ! sorry no picture and I don’t really have a recipe
basically I mix an egg & flour into the cooked white rice trying to get a consistency so that rice stick together as patties. Then I fry in oil. Excellent!
I want to open up a restaurant with this idea Fried rice patties sandwich in between with goodies It would be big hit! Not necessarily a healthy one. Only for the few.
The thing is its my own creation. I really haven’t had time to experiment with the recipe. Would anyone have any ideas on how to make the batter better? In example: ingredients in the rice batter to make the rice sticky? Egg & flour are necessary. Maybe something else ?
