good idea Mike I’ll have to look in to the ingredients of waffle batter
what I do presently do is add the egg to the rice, then add a little flour at time while mixing. till I get a consistency that binds.
Maybe I should make my batter first then add it to the rice?

This is a very simple recipe for great brewed coffee. Next time you make a pot of coffee use same amount of coffee grains but only use 1/2 a pot of water. So the coffee is double strong. Then fill your cup half full w/coffee and add the other half from your water source, preferably hot tap water. The fresh tap water adds a fresh taste to the coffee.
Running all the water thru the grains and thru the coffee maker can make it stale over overly acidic.
Ratio of 1/3 coffee to 2/3 water even better. (So same amount of grains for a full pot and just 1/3 the water so coffee is triple strong)

Made in a three pound tin with just boiling water and a hand full of coffee grounds thrown in,plus one crushed egg shell.... Easy to get hooked on too....I still drink my coffee strong and black....

Egg shell, wonder if they were reducing the acid level ? There is another kiosk I want to open besides fried rice cake sandwiches I want to serve frozen margaritas w/ egg white. if you have never tried putting an egg white in your blended frozen margaritas --your missing out. It makes for a great frothy head and coats the stomach with necessary proteins results in less hang over potential mostly I’ll also sharpen knives at this kiosk and rock’n hearts will be everywhere Eat, drink, cut up, all w/a rock’n heart what more could anyone want ?

Egg shell, wonder if they were reducing the acid level ? In Idaho when I was young we called it "Sheepherder Coffee." Adding eggshell is an old method that was once widely used. When adding coffee grounds to hot water the grounds tend to remain suspended in the water. Adding an eggshell (we used eggshell halves, not mashed) reduced the bitterness of some of the coffee beans of yesteryear and also helped settle the grounds. A splash of cold water after the coffee was steeped also helped clear the brew. You can make some fine coffee that way.

Some camp coffee and old style coffee makers w/coarse filters can have some grounds in suspension. It kind of blows my mind how much better the coffee tastes by adding fresh hot water to a strong brew. I will ask around to find out if egg shells were added to coffee in the south back in the day.

Milk is said to have the same protective effect.

I'm fascinated with how widely individual tastes in coffee vary. I grind my own coffee beans (keep them in the freezer and don't thaw them before grinding.) My method meets my own tastes perfectly but not everyone's. Nor do their tastes always suit me. I've only darkened the door of Starbucks a couple of times to order "plain coffee, black." I don't know how things are down your way but I think McDonald's coffee beats anything Starbucks sells.

In Louisiana most everyone uses community coffee. I have seen some folks add water too it...did not know why until now.

[/quote] McDonald's coffee is a benchmark. I buy Dunkin Donuts coffee, it tastes like McDonald's. Just good plain coffee. Most people like to mix their own coffee. They are particular about it, lots of variations. I think a good coffee shop makes it easy to access the ingredients, for people to mix their own.

kimchi. Similar to a pickling process but in sorts a rotting process practiced in Korea. in this case, young radish w/tops. Healthy

We primarily serve chicory coffee to the tourists. I do not know any locals that use chicory....just Community dark roast coffee.

Nancie, it's interesting how cultural stereotypes endure. Places often sell their past traditions to "romance" tourists instead of showing them less touchy-feely current reality.
